M&B opens new fast-casual concept Son of Steak: Mitchells & Butlers has opened the first site of its new concept Son of Steak, in Nottingham. The company has converted its Harvester restaurant in Trinity Square to the fast-casual concept based around burgers and steaks, featuring counter service. The format is a more mainstream version of its Miller & Carter offer, which currently has 57 sites. The company is looking to achieve a spend-per-head of circa £12. It aims to make “steak an affordable everyday staple, not just something reserved for special occasions”. The company wants to create a brand that makes steak as accessible as Nando’s has made the chicken category. Diners can choose from a 28-day aged premium flat iron steak for £6.50 (six ounce) to £7.20 (eight ounce) or an eight ounce sirloin for £11.60 – half the price charged by a high-end steak restaurant. More unusual cuts lomito (£9.50) and picanha (£7.95) (both from the rump) are also on the menu along with daily steak specials all cooked in a Josper charcoal oven. Burger options feature a bacon and cheeseburger at £7.95 as well as Taiwanese-style street food bao buns, filled with steak (£8.60), hand-pulled chicken (£6.95) or mushroom (£6.10). Although steak is the star, there’s also chicken and veggie offerings, as well as hand-cut chips and sauces such as beef dripping gravy, truffle mustard and creamed horseradish. Six sides are available – mac ‘n’ cheese, crushed sweet potato, creamy bechamel spinach, roast veg sprinkled with zatar, halloumi and avocado caesar salad – that are all priced at £2.80. The brunch menu features picanha steak (eight-ounce or four-ounce) with two eggs – fried or poached – priced £8.95 and £5.95 respectively as well as potato hash with smoked streaky bacon, onion and spinach or red pepper, onion and spinach. Desserts include bottomless fat-free frozen vanilla yogurt (£2.95) and chocolate mousse and a cookie (£2.95). There are also mojito cocktails on tap, a selection of wines, beers – one on tap as well as cans and bottles – spirits and soft drinks as well as tea and coffee.
